IRENE'S ORANGE SLICE CAKE | |
1 c. butter 4 eggs 1 tsp. baking soda 4 c. flour 3 lbs. orange slices, chopped 1 (6 oz.) frozen orange juice 1/2 c. brown sugar, packed 2 c. sugar 1 1/2 c. buttermilk 1 lb. chopped dates 1 lb. chopped nuts 1 lb. candied cherries Cream butter and sugar; add eggs one at a time and beat well. Add soda to buttermilk and stir into sugar mixture. Mix flour and salt together; gradually add to mixture. Now use the last of the flour to coat orange slice pieces, dates, nuts and cherries. Hand stir them into the cake mixture. This makes a large cake. I use a 6-quart pressure cooker pan and insert a center tube into it to bake it in. Bake slowly at 275 degrees for about 3 1/2 hours. Make glaze of orange juice and brown sugar. Pour over hot cake. |
