ONION RICE CASSEROLE 
1 1/2 c. UNCLE BEN'S® raw uncooked rice
3 cans onion soup
6 crisp slices of celery, chopped fine
1 whole large green pepper
1/2 lb. fresh mushrooms, cut up
1/4 lb. butter

Brown celery, green pepper and mushrooms in butter. When browned, mix with onion soup (right from can). Add rice and mix well.

Bake in covered casserole for 1 hour in 350 degree oven. Remove cover and bake uncovered for 30 minutes more. Serves 8.
