LO FAT LEMON CHEESECAKE 
1 c. Keebler vanilla wafer crumbs
3 tbsp. Puritan oil
2 c. 1% cottage cheese
1/2 c. sugar
1 tsp. fresh, grated lemon peel
1/4 c. sugar
3 oz. Neufchatel cheese
2 egg whites
3 tbsp. fresh lemon juice
1 tsp. vanilla

Crust: Combine the wafer crumbs, 1/4 cup sugar, and oil. Press firmly into a 9 inch pie plate.

Filling: Combine egg whites, lemon juice, lemon peel, 1/2 cup sugar, and vanilla. Add Neufchatel cheese and then the cottage cheese a little at a time. (Use a blender.) Pour the mixture over the crust. Bake 30 minutes at 350 degrees. Turn the oven off and allow the cheesecake to remain in the oven for 5 more minutes. Cool; then chill. Serve plain or with fresh fruit.
