BEER - BATTERED FISH 
2 lb. fish, in lg. bite-size pieces, or peeled shrimp, shelled clams or shelled mussels
2 c. flour
1 tbsp. sugar
Salt and other spices to taste
2 tbsp. oil
4 egg yolks
4 egg whites, stiffly beaten
1/2c. beer
Oil for deep frying

Prepare fish for cooking. Combine batter ingredients, mixing carefully to keep a light consistency. Heat oil to 350 degrees. Dip fish pieces in batter and drop into hot oil a few pieces at a time. As each piece turns golden brown, remove to a paper towel lined platter to drain. Serve with tartar sauce (recipe follows) or your favorite salsa.

TARTAR SAUCE:

Mayonnaise
Pickle relish
Capers

Mix.

COCKTAIL SAUCE:

Catsup
Horseradish
Lemon (or lime) juice

Mix.

SALSA FRESCA:

Chopped tomatoes
Onion
Chilis
Cilantro

Mix.
