PEACH VELVET CREAM 
1 lg. can sliced peaches
3/4 c. syrup of peaches
3/4 c. sugar
1 lg. can evaporated milk
1/8 tsp. salt
1/2 c. lemon juice
1 tsp. lemon rind
2 doz. lady fingers
2 envelopes gelatin

Dice 1 1/2 cups peaches. Heat syrup, salt and sugar together. Soften gelatin in lemon juice and dissolve in hot syrup. Add rind. Cool until lightly thick. In the meantime, whip milk until stiff, then fold in gelatin mixture and diced peaches. Pour 1/3 of mixture into mold lined with lady finger. Top mixture with split lady finger. Then pour rest of mixture. Freeze for 24 hours. Unmold and garnish with sliced peaches.

MOLDER: A round bowl lined with wax paper and then lined with split lady fingers.
