MICROWAVED SALMON OR HALIBUT
STEAKS
 
4 (1" thick) salmon OR halibut steaks of equal
2 tbsp. butter
2 tbsp. lemon juice
Salt, lemon pepper, paprika
1 sm. onion, thinly sliced
8 washed lettuce leaves

In 10 inch glass casserole, arrange fish in 4 corners with narrow ends of fish toward center of dish. In glass cup melt butter, or high for 30 seconds. Add lemon juice and pour evenly over fish. Sprinkle with salt and lemon pepper. Top with onion slices and sprinkle with paprika. Cover each steak with a damp lettuce leaf. Microwave on high 5-7 minutes, rotating dish 1/4 turn, halfway through cooking. Rest 5 minutes, covered.

Arrange fish on fresh lettuce leaves, discarding microwaved lettuce. Garnish with lemon slices.

Since microwave ovens vary in power, you may need to adjust your cooking time.
