ONION PIE OR CASSEROLE 
1 c. Ritz cracker crumbs
2 c. thin sliced onion
1/2 stick melted butter
1/2 c. Velveeta cheese, crumbled
2 tbsp. butter
2 eggs
3/4 c. milk
3/4 tsp. salt
Black pepper to taste

Mix cracker crumbs with 1/2 stick butter. Press into pie plate. Saute until done, not browned, in 2 tablespoons butter. Put on top of cracker crumb crust. Beat eggs with milk, salt, and other seasoning. Pour over onions. Sprinkle with Velveeta or cheese of your choice. Bake at 350 degrees for 30 minutes.
