SWEET POTATO BAKE | |
4 medium size sweet potatoes 1/4 tsp. salt 1/2 c. brown sugar 1 tbsp. cornstarch 1 c. orange juice 1/4 c. raisins 1/4 c. butter 1 tbsp. sherry extract 2 tbsp. chopped walnuts 1/2 tsp. shredded orange peel Boil potatoes 20 to 30 minutes until tender. Drain and peel; halve lengthwise. Arrange in a greased, shallow baking dish. Sprinkle lightly with salt. Mix brown sugar, cornstarch, and 1/4 teaspoon salt. Blend in orange juice and raisins. Stir while bringing quickly to a boil; add remaining ingredients and pour over the potatoes. Bake, uncovered, at 350 degrees for 20 minutes. |
