SWEET POTATO CASSEROLE 
8 med. sweet potatoes
1/3 c. raisins
Salt
3/4 c. packed brown sugar
1 tbsp. cornstarch
1/2 tsp. salt
1/2 tsp. shredded orange peel
1 c. orange juice
1/4 c. butter
1/4 c. chopped walnuts

Cook potatoes, covered, in large amount boiling salted water just until tender; drain. Peel and slice. Arrange potatoes in 13 x 9 x 2 inch baking dish. Sprinkle with raisins. Season with salt.

In saucepan combine brown sugar, cornstarch and 1/2 teaspoon salt. Blend in orange peel and juice. Cook and stir over medium heat until slightly thickened and bubbly. Cook 1 minute more. Add butter and walnuts, stirring until butter is melted. Pour mixture over potatoes. Bake, uncovered, at 325 degrees until potatoes are well glazed, about 30 minutes. Baste occasionally. Makes 10 to 12 servings.
