KATHY'S ZUCCHINI SQUARES 
1/2 c. vegetable oil
1/2 c. Parmesan cheese
1/2 tsp. salt
1/2 tsp. seasoned salt
1 clove garlic, chopped
1 c. Bisquick
1/2 c. onion, chopped
2 tbsp. parsley
1/2 tsp. oregano
Dash of pepper
4 eggs, beaten
3 c. zucchini, unpeeled, thinly sliced

Add oil, onion, cheese, parsley, salt, oregano, seasoned salt, pepper and garlic to beaten eggs. Stir in Bisquick mix; and fold in zucchini. Spread in greased 9 x 13 inch pan. Bake 25 minutes at 350 degrees. Cut into squares. Serve hot or cold.
