“CHEWY PEANUT BUTTER COOKIES” IS IN:

CHEWY PEANUT BUTTER COOKIES 
1 cup (2 sticks) butter, softened
1 cup peanut butter
1 cup sugar
1 cup brown sugar, packed
2 eggs
2 cups all-purpose flour
1 tsp. baking soda
6 oz. chocolate or butterscotch chips (optional)
1/2 tsp. vanilla

Combine butter, peanut butter, sugars and eggs. Stir in baking soda and flour and remaining ingredients. Mix well and drop by the teaspoonful onto a cookie sheet, leaving 1-inch space between cookies.

Bake in a preheated 325°F oven for 10 minutes or just until set (depends upon size of cookies).

Remove to wire rack to cool. Store in refrigerator for best taste.

Makes about 50 cookies.

Very easy and simple, it was a nice treat for my man to come home to some homemade cookies. And they only took 40 mins for the mixing, cooking, and cleaning. I added extra vanilla to mine.

I've just made these cookies, and they came out great! I didn't add the chocolate or butterscotch chips, but i did add another 1/2 tsp. of vanilla. Now, I'm thinking about making some more for Thanksgiving.

I made this recipe twice.. first time I used all the ingredients.. and found the cookies were a little thinner than I wanted them to be.. that could be because of the age of my baking soda.. I don't know. But they were still delicious. 2nd batch, I left out the baking soda.. adjusted the cooking time and temp and they were plump and soft.. perfect.. Thanks for the recipe! It's a keeper for days I need a quick cookie snack for the kids!
