ELEGANT CREAM OF MUSHROOM SOUP 
2 (10 3/4 oz.) cans condensed cream of mushroom soup
1 c. half & half
1 c. milk
4 oz. (1/2 c.) sour cream
4 oz. (1/2 c.) processed cheese spread
Dash of cayenne pepper
8 oz. (3 c.) fresh mushrooms, sliced
2 tbsp. white wine (optional)

Mix soup, half & half, milk, sour cream, cheese spread and cayenne pepper in large saucepan. Stir over low heat until cheese melts. Stir in mushrooms. Reduce heat to very low and heat 20 to 30 minutes to blend flavors, stirring frequently. Do not boil. Just before serving, stir in wine, if desired. Makes 6 servings.

I've been making this soup for over 15 years. Did not have much faith about its elegance when I read the ingredients- processed cheese spread & canned mushroom soup? I was looking for a quickie mushroom soup so I tried it. It's foolproof, rich and versatile.

I've made it with beef tips and noodles for a stroganoff version or over rice, cremini or baby bella mushrooms are excellent for this soup. It's a family and pot luck favorite. It can be bland so it def needs the cayenne and I've added a splash of Worcestershire at times.

Made thus soup 3 years ago. It is equally as good now as before. I did however, made some changes. I used 1 can of cream of celery in place if the mushroom soup. I added my seasonings and pulsed half the soup for texture. It is SO YUMMY IN MY TUMMY!!
