LOUISIANA YAM PIE | |
2 c. mashed, cooked Louisiana yams 1 c. firmly packed brown sugar 1 c. light cream 1/2 c. milk 3 eggs 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. ground nutmeg 1/2 tsp. ground ginger 10 inch unbaked pastry shell 2 c. dairy sour cream 1/4 c. sifted confectioners' sugar 1/2 tsp. vanilla In large mixing bowl, combine yams, brown sugar, cream, milk, eggs, salt, cinnamon, nutmeg, and ginger. Pour into pastry shell. Bake in 350 degree (moderate) oven 1 hour or until knife inserted in center comes out clean. Cool. Mix together sour cream, confectioners' sugar, and vanilla. Serve with yam pie. |
