ZUCCHINI SQUASH CASSEROLE 
6 lg. zucchini
2 sticks butter
1 sm. onion
2 tomatoes
Townhouse crackers (1 stack)
3/4 pkg. sliced almonds
3/4 lb. Swiss cheese

Peel and slice zucchini. Put in a pan with 3/4 stick of butter and diced onion. Cook until tender. Put half of the squash in a casserole dish, slice tomatoes on it, then cover with cheese. Repeat with other half of zucchini, tomatoes and cheese. Take stick of butter, melt in saucepan. Crunch up crackers and mix almonds in the melted butter. Cover top of casserole with cracker mixture and bake at 350 degrees for 20-25 minutes.
