ZUCCHINI PARMESAN BREAD | |
3 c. flour 1 c. shredded zucchini 1/3 c. sugar 3 tbsp. grated Parmesan cheese 5 tsp. baking powder 1/2 tsp. baking soda 1 1/2 tsp. salt 1/3 c. butter 1 c. buttermilk or regular milk 2 eggs 2 tbsp. grated onion Mix flour, zucchini, sugar, cheese, baking powder, soda and salt. Melt butter and stir in milk, beat eggs and add to mixture with onion. Stir until smooth. Add flour mixture mixing until blended. Spread in greased 9"x5"x3" pan. Bake at 350 degrees for 55 to 60 minutes. Makes one loaf. |
