AUSTRALIAN PAVLOVA | |
10 egg whites 1/2 tsp. salt 2 c. confectioners' sugar 2 tsp. white vinegar 2 tbsp. cornstarch 1 tsp. vanilla 2 c. whipped cream 3 bananas 1 pt. strawberries, sliced 4 kiwi fruit, sliced 1. Preheat oven to 400 degrees. Grease bake ware plate with butter; dust with a small amount of cornstarch; tap off extra. 2. Beat egg whites and salt until stiff. Add sugar 1 tablespoon at a time until all has been added. Meringue should be thick and shiny. 3. Gently stir in vinegar, cornstarch and vanilla. Spoon onto prepared plate to make a circle approximately 7 inches in diameter. Mixture should be at least 2 1/2 inches high to make a good marshmallow center. 4. Drop oven temperature to 200 degrees and place pavlova in the oven. Bake for 1 1/2 hours. 5. Top with whipped cream and frost before serving. Serves 8. |
