ZUCCHINI BREAD | |
2 eggs 1 c. sugar 1/2 c. salad oil 1/2 tsp. vanilla 1 3/4 c. flour 3/4 tsp. baking soda 1/8 tsp. baking powder 3/4 tsp. salt 1/2 tsp. cinnamon 1 c. grated raw zucchini 1/2 c. walnuts, chopped 1/2 c. raisins (optional) Beat eggs until light; add sugar gradually and beat thoroughly. Beat in oil. Sift dry ingredients together and add to egg mixture alternately with zucchini. Fold in nuts and raisins. Bake at 325 degrees for about 55 minutes. Freezes well. |
