EASY PHILIPPINE CHICKEN 
3 lg. chicken breasts, split
1 (6 oz.) can unsweetened pineapple juice
1 bay leaf, crumbled
1/4 c. vinegar
1/4 c. light soy sauce

Place chicken, skin side up, in shallow roasting pan. Combine other ingredients and pour over chicken. Cover with foil, in preheated oven, 425 degrees, and bake 30 minutes. Uncover, bake 20 minutes or more, basting frequently, until nearly all liquid is evaporated and chicken is rich, dark brown. Serves 6.
