HEARTY REUBEN 
1 package cornbeef
1 onion
sauerkraut
2 pieces swiss cheese
2-4 mushrooms
pumpernickel or rye bread
1/4 stick butter
thousand island dressing

Cut onion to preference (sliced works best) and cut mushrooms to preference (sliced works best).

In a skillet, put 1/8 stick of butter and melt. Add onion and sauté until a hint of brown starts to show. At this time toast bread.

Once the onion starts to brown, add mushrooms. When the onion is about half way browned, add drained (or undrained) sauerkraut. Keep on medium to low heat while finishing the sauté of onion, mushroom, and sauerkraut mix.

When toast is done, butter one side of each piece and place one piece of Swiss cheese on each buttered side of toast. Put left over butter in pan with onion, mushroom, and sauerkraut.

Put toast with cheese in microwave and set timer for 20 - 30 seconds. Once onion are browned to desired likeness put corned beef in mixture and stir for 2-3 minutes. After 2-3 minutes are done let stand and start microwave with cheese toast.

Once toast and cheese is done, put mixture of onion, mushrooms, sauerkraut, and corned beef on toast. On one side put Thousand Island dressing to desired likeness.

Put both pieces of bread together, cut in half, serve with chips and pickles.
