REUBEN MEAT LOAF 
2 lb. ground beef
2 cups bread crumbs*
1 egg, slightly beaten
2 tbsp. ketchup (Hunts)
3/4 tsp. salt
1 (8 oz.) can sauerkraut, rinsed and drained
1 cup shredded Swiss cheese
1/4 lb. pastrami, chopped
1/4 cup dairy sour cream
1 tbsp. yellow mustard

Note: I make my own bread crumbs in the food processor using slices of rye bread with caraway seeds.

Combine ground beef, bread crumbs, egg, ketchup and salt in bowl, mixing lightly. Combine sauerkraut, 3/4 cup of the Swiss cheese, pastrami, dairy sour cream and mustard. Pat out 1/3 of the meat mixture on baking dish, then spread 1/2 of sauerkraut mixture. Repeat layers.

Bake at 350°F for 60 minutes, loosely covered with foil. Remove tent. Sprinkle remaining cheese on top of loaf and bake 5 minutes.
