ZUCCHINI CASSEROLE 
2 lbs. zucchini, sliced
1 onion, sliced
1 can chili (Ortega)
4 eggs, raw
1 c. mayonnaise
1/4 tsp. thyme
Salt & pepper
3/4 c. Parmesan cheese
1 tbsp. butter
1 c. black olives, chopped
Bread crumbs (optional)

Saute zucchini, onions, and chili. Drain liquid or add bread crumbs to soak up juice. Mix rest of ingredients and add to zucchini. Bake at 375 degrees for 25 minutes.
