TABBULEH 
1 c. bulgar wheat
1/2 c. green onions, chopped
1 c. parsley, chopped
1/3 c. lemon juice
2/3 c. olive oil
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. almonds, whole

Soak bulgar in cold water for 2 hours. Add remaining ingredients. Let chill for 2-4 hours. Optional: can add cherry tomatoes if desired.
