BANANA CHUTNEY 
1 green onion, sliced (bulb and top)
1/2 c. grated coconut (fresh or canned)
1 banana, diced
2 tbsp. sugar
Lemon juice
1/4 tsp. salt

Dice banana and sprinkle with lemon juice. Add green onion, sugar and salt; toss lightly. Place in serving dish and top with coconut. Serve as an accompaniment for a curry dinner. Plan on at least half of diced banana per serving.
