APPLE CARROT CAKE | |
2 med. apples, peeled 1 med. carrot 1/4 c. butter 1/2 tsp. lemon juice 2 eggs 1 3/4 c. flour 2/3 c. sugar 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/2 c. chopped nuts (or raisins or coconut or all) 1 tsp. cinnamon Food Processor Method: Add fruit, butter, lemon and eggs. Puree. Add all other ingredients and mix by hand. Regular Method: Shred fruit. Beat butter, sugar, eggs and lemon. Add dry ingredients and stir until blended. Add nuts, etc. Bake in greased loaf pan at 350 degrees for 50-60 minutes. |
