“FEATHER ROLLS” IS IN:

FEATHER ROLLS 
1 package dry yeast
2 teaspoons granulated sugar
1/4 cup warm water
1 cup milk
1/2 cup butter or margarine
1/3 cup granulated sugar
1 teaspoon salt
3 eggs
4½ cups sifted flour
Melted butter

Combine yeast, 2 teaspoons sugar and warm water. Stir until dissolved.

Scald milk and add shortening, 1/3 cup sugar, and salt. Stir until butter has melted. Beat eggs and stir into milk mixture. Stir in yeast and 3 cups flour.

Beat well with a mixer. Stir in remaining 1½ cups flour. The dough will be sticky. Cover and refrigerate overnight.

Turn dough out onto a lightly floured work surface and and form a crescent shape, cloverleaf or Parker House rolls.

Let stand, covered, for about 4 hours. Brush generously with melted butter and bake at in a preheated 400°F oven for 10 minutes or until lightly golden.

Makes 36-48 rolls.
