APPLE SAUCE CAKE 
1/2 c. shortening
1 c. white sugar
1 c. brown sugar
1 egg
1 1/2 c. apple sauce or cooked dried apples
2 1/2 c. flour
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. allspice
1 c. chopped nuts
1 c. chopped raisins
2 tsp. baking soda
1/2 c. boiling water or cooking sherry

Cream shortening, sugar, eggs, and apples. Sift flour before measure. (Save a little sifted flour to use over the nuts and raisins.) Sift remaining flour and spices together.

Dissolve soda in boiling water. Add flour mixture, alternating with the water, to the creamed mixture. Add floured raisins and nuts. Pour into greased and floured cake mold with a hole in the center (like a pound cake pan). Bake 1 hour at 350 degrees.

I like to add the soda to the dry ingredients and use sherry in place of the water.
