APPLE DUMPLINGS 
Peel and finely chop 3 to 4 apples. Cut 2 cups of plain flour, 1/2 cup Crisco and 1/2 teaspoon salt with pastry cutter until mixture resembles cornmeal. Add 3 to 4 tablespoons of cold water to flour mixture and mix together just enough to form large ball of dough. Pinch off a small ball of dough and roll out on floured dough board. Place one pat of butter in center, then top butter with 2 to 3 tablespoons of sugar and a dash or two of Apple Pie Spice. Place approximately 2 to 3 tablespoons of chopped apples on top and fold dough around to make dumpling. Place in greased Pyrex dish and continue to make dumplings until pan is full. Add water to pan until dumplings are all but covered. Top each dumpling with pat of butter and sprinkle with sugar. Bake for 1 hour at 350 degrees.

MILK SAUCE FOR DUMPLINGS:

Pour 1 to 1 1/2 cups of milk in a heavy saucepan. Stir in sugar and Apple Pie Spice to taste and approximately 1 tablespoon of flour or cornstarch to thicken the sauce. Heat over heat, DO NOT LET BOIL. Pour sauce over each serving of dumpling.
