APPLE DUMPLINGS | |
Prepare apples as for pie with chopped apples, sugar and cinnamon; let stand to make juice while preparing crust. Use about 4 cups of apples then sweeten to taste. CRUST: 3 c. flour 1 1/4 c. shortening or lard 1 tsp. salt 1 egg, well beaten 5 tbsp. water 1 tbsp. vinegar Combine flour, salt and lard; mix to make a crumbly mixture. Mix together egg, water and vinegar and add to dry ingredients. Roll out crust and cut in 4 x 4 inch squares. Put some apples and juice in middle of each square and bring corners of crust together and pinch to hold in place. Put into pan deep enough to hold dumplings and juice that will be added later. Bake at 450 degrees until brown (about 20 minutes). Then pour the following sauce over dumplings and continue to bake at 350 degrees for additional 30 minutes. SAUCE: 2 c. brown sugar 3 c. water 1/4 c. butter Bring mixture to boil before pouring over dumplings. Makes 8-10 dumplings. |
