OATMEAL REFRIGERATOR COOKIES 
1/2 c. shortening
1 c. brown sugar
1 egg
2 tbsp. water
1/2 tsp. vanilla
1/4 tsp. almond extract
1 1/4 c. flour
1 c. rolled oats
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. chopped raisins
1/4 c. chopped nuts

Cream shortening and sugar together. Add egg, water and flavoring. Beat until fluffy. Sift flour. Measure. Add salt and baking soda; sift again. Add oats to dry ingredients. Add dry ingredients to creamed mixture and stir until well blended. Add finely chopped raisins and nuts. Shape into rolls 2 1/2" in diameter; refrigerate overnight.

Slice into 1/8" thick slices and place 1" apart on greased cookie sheet. Bake at 375 degrees for 8 to 10 minutes. Makes approximately 3 dozen.
