REFRIGERATOR OATMEAL COOKIES 
1 c. butter
1 c. firmly packed brown sugar
1 c. granulated sugar
2 eggs
1 tsp. vanilla
1 tsp. salt
1 1/2 c. all purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground nutmeg
3 c. quick cooking oats
1 tsp. chopped walnuts or pecans

Cream butter with brown and granulated sugar until fluffy. Beat in eggs and vanilla. Sift the dry ingredients and add to creamed mixture. Stir in oats and chopped nuts. Halve cookie dough and pat each in a roll. Wrap each in waxed paper. Refrigerate until firm. Cut in thin slices. Bake at 350 degrees 10 to 12 minutes or until lightly browned.
