“CROCK POT CHICKEN CACCIATORE” IS IN:
NEXT RECIPE:  DIJON CRAB CAKE SAUCE

CROCK POT CHICKEN CACCIATORE 
3 to 4 lbs. boneless/skinless thighs and breasts
1 large onion, thinly sliced
2 large red or green bell peppers, sliced
3 cloves garlic, crushed
1/2 teaspoon each basil and oregano
1 (6 oz.) can tomato paste
fresh mushrooms, sliced
2 bay leaves
1 (8 oz.) can stewed tomatoes with chiles
salt and pepper to taste
2 cups burgundy wine
Parmesan cheese, for sprinkling before serving

Place sliced onions on bottom of crock pot. Add chicken.

Stir together remaining ingredients and pour over chicken.

Cook on low for 7-9 hours or high for 3-4 hours. Serve over pasta, with a salad on the side.

Fixed this last night. put it over angel hair pasta and did not like it. So today for lunch, no pasta and it is very good. Probably should have used a different pasta. I will cook again. Will add more onions and probably add some celery and green peppers with the red.

This was delicious! Definitely a repeat dinner. I added green olives, cut the wine to a half cup, and added a can of chicken stock. I threw noodles in the last 30 min, and it turned out great. Kids loved it!

Not great, not bad... but disappointing. Not what I remember Chicken Cacciatore should taste like. Seemed that it wasn't very thick. The overall flavor wasn't bad though, thus the neutral review.

This was a great recipe. I used breasts only, canned mushrooms, rotel tomatoes/chilis, & chicken broth for the wine. Also I skipped the sliced peppers as I didn't have any. I cooked it on high for 4 hours. It was delicious for a crock pot meal. The chicken was very moist. Next time I'll use legs & thighs as my family likes dark meat better and it does well in the crock pot. I think the fresh parmesan on the top is a must. Nice solid recipe to add to the file.

My gramma puts green olives and mushrooms, can I do that and also stewed tomato but not the chili stewed tomatoes, I couldn't find, and also the oregano and basil can I use the fresh squeeze kind and herb oregano?

I made this dish last night and my family loved it. I did not have enough wine for the sauce and was a little worried that it would not come out right but the empty plate at the end of the meal said it all. It was very easy to put together and I served it over Penne. I will be adding this one to our dinner plans more often.

I had a lot of frozen chicken in the freezer and most of the ingredients this recipe called for so I made it for the family. It was a huge hit! I added more onion that it calls for and some celery. So easy and full of flavor. Thank you, this one is going in my recipe collection.
