CLAMS CASINO 
2 c. minced canned clams (3, 7 1/2 oz. cans)
1/2 c. minced onions
1/3 c. minced green pepper
1/3 c. minced celery
1 1/3 c. bread crumbs
1 c. heavy cream
1 beaten egg
2 tsp. French Dijon mustard
1/2 tsp. pepper
2 tbsp. melted butter
Few strips of bacon
1 c. cheddar cheese, grated

The onions, celery and green pepper must be minced really well so that they are in very small pieces. I've never used any other mustard but the French Dijon one. This also can be made ahead of time.

Mix the above ingredients except cheese and bacon. Put clam mixture into shells; sprinkle grated cheddar cheese on top. Partially bake a few strips of bacon; drain and crumble on top of mixture. Bake at 350 degrees for 20-30 minutes if mixture is room temperature.

NOTE: The clams come in a can marked MINCED.
