CLAM AND CHEESE DIP 
4 (7 1/2 oz.) cans minced clams
1 c. diced green pepper
1 c. diced onion
1/2 c. parsley flakes
4 tsp. lemon juice
1 1/2 c. seasoned bread crumbs
1/2 lb. butter
3/4 tsp. black pepper
3 slices white American cheese, cut up
Grated Parmesan cheese

Drain all but 1 can of clams. Mix clams in a saucepan with pepper, onion, parsley and lemon juice. Bring to a boil, reduce heat, and simmer 10 minutes. Stir in bread crumbs, butter, pepper and cheese. Spoon into a baking dish and top with grated Parmesan. Bake in a preheated 325 degree oven for 30 minutes. Serve with Triscuits or any plain cracker. Serves 10-12.
