ISLAND CAKE 
1 box yellow cake mix
1 (11 oz.) can mandarin oranges with juice
4 eggs
1/2 c. vegetable oil
Icing (recipe follows)

Mix cake mix, oranges and juice, eggs and oil with electric mixer until orange slices are broken up and batter is fluffy, about 3 minutes. Divide among three greased and floured 9" layer cake pans and bake at 350 degrees for about 20 minutes or until cake tests done. Cool on rack. When layers are cool, ice between layers, sides and top.

ICING:

1 (20 oz.) can crushed pineapple, with juice
1 (8 or 9 oz.) container dessert whipped topping
1 (3 oz.) pkg. instant vanilla pudding mix, uncooked

Blend pineapple and juice, dessert topping and dry pudding mix until well mixed. Keep under refrigeration until used. Makes 12 to 14 servings. The cake must be kept refrigerated.

Since I have trouble with layer cakes, I cooked this in a 9x13 pan for about 35 minutes. Then I poked holes in the cake and poured a small can of pineapple juice in the holes before frosting. It was delicious. The icing is to kill for, it is so good.
