RHODE ISLAND CLAM CAKES | |
3 eggs (beaten until light) 1 tsp. salt 1 c. milk 3 tsp. baking powder 1 c. clams or quahogs (cut up) 1/8 tsp. pepper 2 c. flour Mix in order, eggs, clams, salt, pepper, milk, flour, baking powder. Drop by tablespoonsful into heated deep fat to fry until golden brown. |
