RHODE ISLAND JOHNNY CAKES 
1 c. Johnny cake meal or cornmeal
1/2 tsp. salt
1 level tsp. sugar (optional)
1 1/3 c. boiling water

Pour water over meal, salt and sugar. Mix well. Thin down with milk to consistency of mashed potatoes. Drip by spoonfuls on hot griddle or frying pan. Cook 5 minutes. Turn over, and cook 5 minutes more. Serve with butter and syrup.

My husband and I saw this on Diners Drive ins and Dives last night and since we love pancakes had to find a recipe. I could not believe how easy this was, was not expecting a big deal from such easy ingredients. Boy was I wrong!! They were delicious!! I did have to thin it down a little with the milk. This recipe made 6 4-inch size cakes.

Have not made this recipe, but since I am a Rhode Islander, here are a couple of family hints: you must use white corn meal (preferably Kenyons brand, which is ground in RI), a caste iron frying pan, bacon grease for frying is the preference and "scalding" water. Also, when frying 5 mins on one side 6 mins on the other. Thicker cakes are more traditional, but thin are good also.

My mom would often make these in her cast iron skillet and used the cornmeal from Kenyon's, of course. However, if you're not a Rhode islander, their website has recipes, background information, and mail-order. Johnny cakes are great as a sub for pancakes at breakfast with butter and maple syrup, but they are also nice served as a savory side.
