OMELET 
2 eggs, separated
1/8 tsp. cream of tartar
1/8 c. cold water
1/8 tsp. salt
1 tbsp. butter
2 tbsp. shredded cheese

Preheat oven to 350 degrees. Beat egg whites with cream of tartar at high speed to stiff peaks. Beat egg yolks with cold water and salt until fluffy. Fold yolks into whites. Melt butter in 8" skillet. Cook mixture then bake 10 minutes. Slit top, add cheese. Fold over. Serve on heated platter.
