BRAN MUFFINS 
1 1/2 c. sugar
1/2 c. oil
2 eggs
2 c. buttermilk
2 1/2 c. flour
2 1/2 tsp. baking soda
1/2 tsp. salt
1 c. boiling water
1/2 lb. dates, chopped
2 c. Kellogg's All Bran
1 c. Nabisco 100% Bran

Pour water over 100% Bran and set aside. Cream together sugar and oil. Add in eggs. Add buttermilk, flour, baking soda and salt; beat well. Stir in All Bran, 100% Bran mixture and dates until cereal is well coated. Pour into well greased muffin pans. (May use cupcake papers.) Bake at 400 degrees for 15-20 minutes. Makes 36 medium sized muffins. Batter may be kept covered in refrigerator for 3-4 weeks.
