CANADIAN-STYLE PEA SOUP 
2 c. peas
2 grated carrots
1 celery stick
2 qt. water
1/4 tsp. baking soda
1 tbsp. salted herbs
2 tbsp. fat

Mix all ingredients in a large pot and cook for 10 minutes; do not cover. Cover and simmer for 3 to 4 hours.

REMARK: For faster results, sort, wash, and soak peas overnight in cold water.
