PORTUGUESE SOUP - FAIAL STYLE | |
1 can red kidney beans 2 1/2 qt. water 1 lb. chopped kale 6 med. size potatoes, cubed 2 fresh tomatoes, cut into quarters 1 med. onion, whole 1/2 lb. linguica, cut into 1/2 inch rings 2 heaping tbsp. vegetable shortening 1 tbsp. salt of taste 1 tsp. crushed pepper 1 tbsp. chopped fennel (tuncho) Strain beans through food mill and add to water. Place in a 4 to 6 quart pan and bring to a boil. Chop kale into small pieces and add to water. Add cubed potatoes, onion, Crisco, tomato and linguica, and allow to boil for about 25 minutes, before you shut off fire. Add fennel. Makes 8 to 10 servings. |
