NORTH CAROLINA SWEET POTATO
PUDDING
 
2 c. raw sweet potatoes, finely grated
1/4 c. white sugar
1 c. brown sugar
2 tbsp. soft butter
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. cloves
1/4 tsp. nutmeg
1/8 tsp. ginger
2 c. milk
4 eggs, unbeaten

Mix sweet potatoes, sugars and butter. Blend in salt, spices and milk. Add eggs, one at a time, beating thoroughly after each addition. Turn into deep, buttered casserole. Bake for 1 hour in 325 degree oven. Makes about 8 servings.
