CORN BREAD 
1 egg
1 c. plus 2 tbsp. milk
1/2 c. flour
1 c.yellow corn meal
3 tbsp. sugar
3 tbsp. baking powder
1 tsp. salt
3 tbsp. soft shortening (bacon grease adds flavor)

Heat oven to 450 degrees. Grease pan 9 x 9. Heat pan in oven while mixing batter. Beat eggs, measure flour. Beat all ingredients until smooth. Pour batter into hot pan. Bake 10 to 15 minutes for muffins, 20 to 25 minutes for corn bread. Serve hot.
