FILLO CHEESE SQUARES | |
1-2 sticks melted butter 1/2 pkg. fillo dough (8 sheets) 1/2 lb. feta cheese 1 lb. lowfat ricotta cheese 1/4 c. fresh minced parsley 2 eggs Beat eggs and fold in cheeses and parsley. Brush pan with melted butter. Place 4 sheets fillo dough in lasagna tray with melted butter brushed between layers. Pour cheese and egg mixture over fourth layer and spread evenly. Add additional 4 layers on top separated by brushed butter. Bake at 350 degrees for 1/2 hour or until top is golden. Cut in squares and serve warm. Makes 2 dozen. |
