CAJUN PORK ROAST 
2 lbs. boneless single loin pork roast
Cooking oil

CAJUN SEASONING:

1/2 tsp. cayenne pepper
1 tbsp. garlic powder
2 tsp. oregano
2 tsp. thyme
1/2 tsp. salt
1/2 tsp. ground white pepper
1/2 tsp. cumin
1/4 tsp. nutmeg

Preheat oven to 350 degrees.

Rub surface of loin lightly with oil.

In a small bowl combine herbs and spices until well blended. Rub Cajun seasoning mixture well onto all surfaces of meat. Work well until roast is well coated.

Place roast in a shallow pan and roast in a 350 degree oven for about an hour, until internal temperature reads 155 degrees F. on a meat thermometer. Remove from oven and, this is important, allow roast to rest 5-10 minutes before slicing. Serves 4-6.

You can make a gravy from the drippings and serve over potatoes.
