BANANA MUFFINS 
1 c. oatmeal
1/4 c. buttermilk
1 sm. ripe banana
1 egg, beaten
1/2 c. brown sugar
1 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/3 c. canola oil (or corn oil)
1 tsp. grated orange rind

Combine oatmeal, milk, banana; mix well. Add egg, brown sugar, and orange rind. Sift dry ingredients together and add to milk mixture. Stir in oil lightly. Fill muffin papers 2/3 full. Bake at 400 degrees for 15 to 20 minutes. Sprinkle tops with cinnamon and sugar before baking, if desired.
