SPANISH RICE (Microwave) | |
1 lg. onion, chopped 1/4 c. chopped green pepper 2 tbsp. butter Water 1 c. stewed tomatoes, chopped and drained - save liquid 1 c. long grain rice 1 1/2 tsp. salt 1/8 tsp. pepper In 2 quart casserole combine onion, green pepper and butter. Cook on High 2 1/2 to 3 minutes. Add enough liquid out of tomatoes to make 2 cups. Add to dish with tomatoes, rice, salt and pepper. Cover. Cook on High for 5 minutes then on medium for 20 minutes. Stir only once. Let stand covered for 5 minutes. (Time may vary with each microwave.) |
