BANANA CREAM SANDWICH COOKIES 
2 1/3 c. flour
1 c. sugar
1 c. butter
1/2 c. (1 med.) sliced banana
1/4 tsp. salt
1 tsp. vanilla
1/2 c. chopped pecans

Preheat oven to 350 degrees. Grease cookie sheets. Combine all ingredients, except for pecans and beat at low speed, scraping sides of bowl often until well mixed. Stir in pecans.

Shape rounded teaspoonfuls of dough into balls. Place 2 inches apart on sheet. Flatten cookie to 1/4 inch thickness with bottom of glass dipped in flour. Bake for 12-15 minutes or until edges are lightly browned. Remove and cool completely before putting cookies together in pairs with 1 tablespoon frosting to each sandwich.

FROSTING:

3 c. powdered sugar
1/3 c. butter
3 to 4 tbsp. milk
1 tsp. vanilla
Food coloring

Combine all frosting ingredients and beat at medium speed until light and fluffy. Color with food coloring, if desired.
