CHICKEN SALAD 
3 c. cooked diced chicken, ham or tuna
1/4 c. chopped sweet pickle
1 1/2 c. celery, diced
3 eggs, hard boiled and diced
1/4 c. mayonnaise
1/2 tsp. salt

Combine chicken, celery, pickles, and eggs in a large salad bowl. Add mayonnaise and salt and toss just enough to mix well. Chill until time to serve. Serve on lettuce cups or in tomato shells and top with mayonnaise and a dash of paprika for color. Serves 6-8.
