ZUCCHINI-BEEF CASSEROLE 
3/4 lb. ground beef
3/4 tsp. garlic powder
2 med. zucchini, halved lengthwise and cut into inch slices
1 sm. onion, chopped
16 oz. can tomatoes, quartered
1/2 c. uncooked rice
1/4 c. soy sauce
1 1/2 tsp. basil, crumbled
1/2 c. water

Crumble beef in a 2 quart microwave safe casserole dish. Sprinkle with garlic powder; cover and microwave on high for 3 minutes. Stir in zucchini, onion, tomatoes, rice, soy sauce, basil, and water. Cover; microwave on high for 27 minutes or until rice is tender.

Since microwave ovens vary in power, you may need to adjust your cooking time.
