ZUCCHINI FILLING 
8 c. zucchini, sliced thin
1 can cream of chicken soup
1 c. sour cream
1 c. shredded carrots
1/4 c. chopped onion
1/2 c. melted butter
1 (6 oz.) Stove Top stuffing mix, chicken flavor

Cover zucchini with water, bring to boil and cook 5 minutes. Pour into colander and drain well. Combine soup, sour cream, carrots and onions. Fold in drained zucchini. Set aside.

Mix stuffing with melted butter. Spread 1/2 of mixture into 13 x 9 inch pan. Pour zucchini mixture on top. Spread remaining stuffing mix on top of that. Bake at 350 degrees for 25 to 30 minutes.

NOTE: For more filling put 1 (6 ounce) stuffing mix in bottom fo pan, then zucchini mixture, then another 6 ounces stuffing mix on top. Delicious both ways. Good served with baked chicken.
